• Lead and manage daily bakery production to ensure high-quality standards.
• Oversee the preparation and baking of artisan bread, cakes, and pastries.
• Maintain consistency in taste, texture, and presentation of all baked products.
• Develop and refine new and innovative pastry, cake, and bakery recipes.
• Ensure that all baked goods meet Big Square’s brand standards.
• Create seasonal menus and specialty baked items to attract customers.
• Supervise, mentor, and train junior bakers and apprentices.
• Conduct regular skills training sessions to enhance team performance.
• Provide constructive feedback to improve baking techniques and efficiency.
• Monitor and maintain stock levels of baking ingredients.
• Reduce ingredient waste and unsold product losses through accurate demand forecasting.
• Work with the procurement team to source high-quality baking ingredients.
• Ensure strict adherence to food safety, hygiene, and regulatory standards.
• Implement proper food handling and storage procedures to maintain freshness.
• Maintain a clean, organized, and safe bakery environment.
• Culinary degree or diploma in baking/pastry arts from a recognized institution. • 3+ years of experience in a reputable hotel, bakery, or restaurant. • Expertise in artisan baking, pastry arts, and cake decorating. • Strong leadership and mentoring skills • Excellent recipe development and innovation skills. • Strong time management and organizational skills. • Ability to work under pressure and meet production deadlines. • High level of creativity and attention to detail in baking. • Familiarity with modern baking techniques, tools, and equipment. • Ability to train and motivate junior team members effectively
